The Spirit of Scotland is an exclusive four-part dining series celebrating four legendary Scottish whiskey houses: House of Hazlewood, The Macallan, The Dalmore and Glenmorangie. Each evening features a thoughtfully curated, multi-course menu inspired by autumn’s bounty, expertly paired with rare and distinguished Scotch whiskies—from delicate Highland drams to robust, peated expressions.
House of Hazelwood

Join us for an extraordinary evening with House of Hazelwood, hosted Phil Keene, Managing Director House of Hazelwood as he brings to life the history, provenance and stories behind one of the world’s most remarkable private collections of Scotch whiskey. Built over almost a century by generations of the Gordon family, House of Hazelwood spans seven decades and every corner of Scotland, including exceptional aged whiskies that will never be recreated. Enjoy a multi-course dinner paired with five rare expressions, including whiskies aged up to 46 years, while discovering the stories behind these remarkable spirits.
The Dalmore

Join us for an exceptional evening with The Dalmore, beginning with a signature The Dalmore 12 cocktail before exploring four remarkable Highland whiskies alongside a specially curated, multi-course dinner. The evening will showcase the distinctive influence of sherry and Port across expressions including The Dalmore 15, 18, 35 Year Old and 2009 Vintage. Hosted by Dalmore whisky expert Emma Coady, guests will explore the craftsmanship, maturation and character behind each expression in an intimate setting within Fairmont Hotel Vancouver.

Discover the defining influence of exceptional oak casks, sherry seasoning and time during an intimate evening with The Macallan. Enjoy a multi-course dinner paired with six exceptional expressions from The Macallan’s Double Cask and Sherry Oak collections, including Sherry Oak 12, 18 and 25 Years Old. The evening will be led by Adam Collins, Brand Specialist for The Macallan, whose passion for whisky, oak craftsmanship and storytelling brings the character and romance of the brand to life. Limited to just 30 guests for an intimate evening of whisky, cuisine and storytelling.
